Thanksgiving Turkey Salad

2-3 cups leftover turkey chopped into small pieces. 

1 cup homemade mayo (previous recipe)

2 teaspoons dried thyme

1⁄2 teaspoon sea salt

1⁄2 teaspoon pepper

1⁄2 cup dried organic cranberries

Combine all ingredients and let sit overnight to rehydrate herbs and cranberries. Enjoy on lettuce wraps or by the spoon! 

Taco Seasoning

  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • 2 teaspoons dried oregano
  • 1⁄2 teaspoon sea salt
  • 1⁄2 teaspoon onion powder
  • 1⁄2 teaspoon garlic powder
  • 1⁄2 teaspoon cayenne pepper

Combine all ingredients into a sealed plastic bag and shake until mixed thoroughly. To make taco meat, add seasoning mix to 1 pound of grass fed ground beef or ground turkey along with 1⁄2 to 3⁄4 cup water and cook to desired consistency.

Thai Pumpkin Soup

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 1 tablespoon tomato paste
  • 21⁄2 cups canned pumpkin
  • 2 tablespoons fresh ginger
  • 1 clove garlic, chopped
  • 3 cups chicken or vegetable broth
  • 1 tablespoon green chilies, chopped
  •  3⁄4 cup coconut cream
  • 3⁄4 cup coconut milk
  • 1 tablespoon fresh lemon juice

Sauté onion in olive oil until soft. Add tomato paste, pumpkin, ginger, garlic, and broth. Combine until thoroughly heated. Place remaining ingredients and cooked ingredients in blender. Blend for 30 seconds. Season with sea salt and pepper to taste. Serve immediately. Note: If a less sweet soup is desired, omit coconut cream and increase coconut milk to 11⁄2 cups. Serves 2-4.

Apple Cinnamon Surprise

Blend all ingredients in a Blender and enjoy!

  • 1 Apple
  • 1/2 banana
  • 2 Tbs SP complete vanilla
  • 1/2 cup water or coconut milk
  • 3 cubes of ice
  • 1/2 tsp cinnamon 
  • 1 tsp ground flaxseed
  • 1 tsp walnuts

Power Breakfast Bowl

Brown bacon and add onion, sautée until onions caramelize. Add remianing ingredients and cook until spinach is wilted. 

  • 1/2 cup cooked quinoa
  • 2 large handfuls of spinach
  • 1 slice of nitrate free bacon cut up
  • 1/4 onion chopped
  • 4 baby bella mushrooms cut up
  • 1 tsp Trader Joes ‘everything but the bagel seasoning’
  • salt and pepper to taste

Tip: pre make your quinoa and place it in the fridge… using cold quinoa in a stir fry gives it more crunch and texture. 

Pumpkin Spice Smoothie

A healthy fall favorite! Blend all ingredients and enjoy!

  • ½ cup pumpkin puree
  • 1 frozen banana
  • 1 cup coconut or almond milk
  • 1 teaspoon pure maple syrup (optional, personally the banana adds enough sweet for me)
  • ¼ tsp vanilla
  • ¼ tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp allspice
  • ½ cup ice

Turkey Chili

Place all ingredients EXCEPT beans in a crock pot and let cook 4-6 hours. Add beans for the last hour of cooking. Serve with a dollop of organic sour cream and/or sprinkle of grass fed shredded cheddar. 

  • 1lb ground turkey, sautéed and cook through
  • 1 small onion, chopped and sautéed with butter.
  • 1 can chopped green chilis
  • 1/2 jar salsa verde
  • 3 cloves of garlic minced
  • 3 cups chicken bone broth.
  • 1tsp oregano
  • 2 cans white organic beans rinsed. 
  • 1 tsp chili seasoning (optional)
  • salt and pepper to taste

Sweet Banana Coconut Smoothie

  • 4 dates, pitted
  • 1 1⁄2 cups unsweetened coconut milk (full fat)
  •  2 scoops SP Complete Vanilla
  • 1 avocado
  • 1 banana, chopped and frozen
  •  1 cup unsweetened coconut milk (full fat), frozen
  • 1 tsp vanilla extract
  • 1 1⁄2 cups ice

Blend dates and coconut milk in blender until combined and date pieces are no longer visible. Add SP Complete and blend again. Add avocado, banana, frozen coconut milk, vanilla, and ice. Enjoy!

Homemade Mayonaisse

Mayonnaise often contains unhealthy oils and/or sugars. Now you can have healthy mayo in under 10 minutes! 

  • 1 egg
  • 1 tsp lemon juice
  • 1 tsp dijon mustard
  • salt to taste
  • 1 cup avocado oil or LIGHT olive oil

Blend egg, lemon juice and mustard with immersion blender. When mixture becomes frothy, SLOWLY drizzle in oil, small amounts at a time. SLOWLY. DRIZZLE. Continue to blend. Mixture will emulsify and become thicker over time.

Crustless Quiche

(makes 2)

Mix all ingredients together in large bowl, pour equally into two greased pie plates. Bake at 350 for 45 min or until knife inserted comes out clean. 

  • 18 eggs
  • 10oz grass fed cheddar cheese shredded
  • 1/4 cup cream
  • 1 bag frozen broccoli chopped
  • 3 cloves of garlic minced
  • 1/2lb chopped then cooked bacon (unsmoked and uncured) *be sure to add grease from pan after cooking to bowl!
