Mayonnaise often contains unhealthy oils and/or sugars. Now you can have healthy mayo in under 10 minutes!
- 1 egg
- 1 tsp lemon juice
- 1 tsp dijon mustard
- salt to taste
- 1 cup avocado oil or LIGHT olive oil
Blend egg, lemon juice and mustard with immersion blender. When mixture becomes frothy, SLOWLY drizzle in oil, small amounts at a time. SLOWLY. DRIZZLE. Continue to blend. Mixture will emulsify and become thicker over time.
