Brown bacon and add onion, sautée until onions caramelize. Add remianing ingredients and cook until spinach is wilted.
- 1/2 cup cooked quinoa
- 2 large handfuls of spinach
- 1 slice of nitrate free bacon cut up
- 1/4 onion chopped
- 4 baby bella mushrooms cut up
- 1 tsp Trader Joes ‘everything but the bagel seasoning’
- salt and pepper to taste
Tip: pre make your quinoa and place it in the fridge… using cold quinoa in a stir fry gives it more crunch and texture.
